Ramada Encore Muscat is now seeking an Assistant Cost Controller to join our team in Muscat, Oman.

Job Summary

The role holder will contribute to the performance of the hotel by facilitating to monitor activities relating to Food & Beverage cost controls within his assigned area of concern include Food & Beverage, Purchasing, Receiving, Storage and issuing, menu planning, production and portion control, pricing, inventories, reporting. To perform analysis and prepare reports to keen all levels of management informed of day to day food & beverage cost, problems and opportunities and to provide necessary information for accounting entries.

  • To check and see that bidding procedures as specified by the hotel are adhered to.
  • To report deviations to hotel Director of Finance for review with Management.
  • To verify that Wyndham standard purchase specifications are followed on a continuing basis
  • To check daily quotation sheets prices with invoiced prices.
  • To provide information from perpetual inventory records needed for beverage purchases.
  • To verify the accuracy of the entries, extensions and totals of the Receiving Clerk’s daily report and that all food items received, with or without invoice have been properly recorded thereon.
  • To ensure that all food & beverage invoices and competitive quotations sheets are sent to the General Manager’s office daily for approval.
  • To verify the notice of error correction and goods received without invoice form have been prepared where appropriate.
  • To spot check merchandise received daily to determine that it conforms to specifications as to weight, trim and count and that it has been properly invoiced.
Storage and Issuing
  • To ensure that all merchandise is store in properly locked storage areas and monitor security control keys for all such areas.
  • To check merchandise storage practices periodically as to orderliness, price stamping and rotation of merchandise.
  • To maintain a daily and cumulative monthly record of food & beverage requisition and direct purchases issued to the producing department without requisition.
  • To monitor procedure for issuing food & beverage items in the storeroom to ensure that such merchandise is issued only on written requisition signed by a properly authorized person.
  • To monitor beverage issue procedures to make certain bar requisitions are handled according to cost control manual instructions.
Menu Planning, Production Control, Portion Control and Pricing
  • To participate in the formulation and enforcement of sound control procedures for Banquet Beverage Bars including issue, return and reissue practices.
  • To participate in planning daily salvage, control and usage leftover food items including banquets.
  • To furnish to the chef the information needed in planning daily production requirements and monitor daily production of pastry and other items to see that they are according to the plan.
  • To check the butcher shop production record daily for yield information and for control of steak usage.
  • In cooperation with the Food & Beverage Manager and the Chef, to establish standard portion sizes for all outlets, post in proper location in kitchen and monitor on a continuous basis to see that they are adhered to.
  • Ensure 100% compliance with all mandatory training for your department;
  • Support WeCom with quarterly People, Community and Sustainability engagement events
  • A minimum of 2-4 years’ experience in a similar capacity at any 3/4 star international hotel.
  • Preferably experience in a branded international hotel chain
  • Fluent in English
  • Diploma in procurement preferred
  • University Bachelor Degree or Higher Secondary School certificate
