Wyndham Dubai Deira, Super 8 and Days Hotel Deira is now seeking a Cluster Hygiene Manager to join our team in Dubai, United Arab Emirates.

Job Summary

A Cluster Hygiene Manager oversees the maintenance/upgrade of sanitation and hygiene standards to ensure all food served to guests and employees are free of microbiological, chemical and physical contamination and all work areas conform to required Hygiene and Sanitation levels. The Job incumbent works in line with the hotels guidelines and business plan, and Wyndham Corporate policies and procedures, and according to local requirements and regulations.

KEY RESPONSIBILITIES
Main Duties
  • Proposes and maintains minimum standards in all work areas, stores, receiving and disposal areas to adhere at all times to required hygiene standards
  • Responsible for effective and efficient maintenance of records related to the Hotel's sanitation and hygiene efforts/program
  • Formulates and maintains an up-to-date methodology manual that is constantly available for use and review by the section personnel
  • Responsible for promoting effective dissemination coordination with the rest of the staff in the Hotel
  • Responsible for the office/section area being clean and orderly with an organized and efficient workflow
  • Performs special assignments and projects assigned to the office by the superiors
  • Conduct and chair the EHS Monthly Meeting
  • Monitors, assists and performs all procedures and protocols for maintaining an excellent sanitation and hygienic environment
  • Is part of the Hotel's Sanitation Team, which conducts monthly sanitation inspections throughout all food handling areas and generate respective reports
  • Continually liaises with external agencies (laboratory, government bureau, health practitioners, etc.) on sanitary matters.
LAWS, REGULATIONS AND POLICIES
  •   Ensures compliance with business operations laws
  •   Ensures compliance with hospitality operations laws
  •   Supervises closely all applicable rules of safety in the workplace as well as all statutory laws of the country and local municipality laws.
QUALITY MANAGEMENT SYSTEM
  • Develops quality management systems
  • Measures the quality of services and products
  • Manages quality improvement
  • Establishes bench marking for the department
HUMAN RESOURCES
  • Ensure 100% compliance with all mandatory training for department as well as the Departmental Trainers are positively encouraged
  • Controls the LTO, Absence and Payroll in your department in conjunction with the HR Leader on property.
  • Conduct interviews for relevant roles in conjunction with HR
  • Ensures that you dine in the Team member restaurant at least three times a week and provide HR Leader on property feedback
  • Supports WeCom with quarterly People, Community and Sustainability engagement events

  • Excellent interpersonal skills for diplomatically handling staff and customers
  • Strong written an oral communication skills for managing business admin and personnel matters
  • The ability to cope under pressure Excellent business awareness for achieving successful performance
  • Excellent teamwork skills that will enable him/her to lead a team and be a part of it
  • Strong planning and organizational skills to run a streamlined operation
  • The ability to work independently and confidently to make your own decisions
  • Problem-solving ability to resolve issues as they arise

EXPERIENCE, CERTIFICATE & EDUCATION
  • Minimum two to three years of work experience as Cluster Hygiene Manager in a hotel or similar large restaurant complex, preferable prerequisite is experience in the Hotel industry
  • Positive can do attitude and flexible approach manages with humility
  • Good computer skills. - Effective trainer, experienced in the delivery of skills training
  • Familiar with current culinary trends and methods
  • Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards Certifications
  • Bachelor of Food Science
  • GMP (Good Manufacturing Practice)
  • HACCP (Hazard Analysis and Critical Control Point) - ISO 22000 (Food Safety Management System)/ Quality Management System ISO 9001
  • OHSAS 18001 (Occupational Health and Safety management System)
  • Train the Trainers – Facilitator
  • Environment Management System ISO 14001
