Ramada Encore Newcastle-Gateshead is now seeking a Food & Beverage Manager to join our team.

Job Summary

The Food & Beverage Manager will provide leadership for all the day to day operation of the F&B department in respect to service and product standards, revenues and cost control with the aim of achieving optimum financial returns whilst ensuring highest levels of team member and guest satisfaction.

KEY RESPONSIBILITIES

  • Provides the strategic direction for F&B department of the hotel and quality service delivery as measured by Medallia as well as Online Feedback sites such as TripAdvisor and Booking.com
  • Ensures that effective communication flow is maintained at all times
  • Plan and executive regular F&B departmental meetings to drive efficiency and team working
  • Ensures that the operational departments work effectively as one team with the F&B departments to provide seamless service across the operation.
  • In conjunction with the Kitchen Manager, prepares the sales promotions, menu engineering etc. to meet guest and budgetary expectations
  • Ensure the hotel is in full compliance with licensing, Health & safety and Food Hygiene regulations as well as other relevant legislation and policies and procedures.
  • Has a detailed understanding of the competitive landscape as a whole in your area/city including emerging trends.
  • Gathers for large events, oversees for medium/small events, guaranteed attendance numbers.
  • Assures bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared.

Other Duties

  • Regularly reviews and evaluates the degree of customer acceptance of the individual restaurants and banquet service.
  • Takes an active role in the supervision of the preparation of the marketing plan, operation plan and related action plans, including F&B pricing strategies.
  • Be present at peak operational hours.
  • Ensures that the F&B operations team thinks outside the box with regards to ‘wowing the guests’
  • Conducting frequent and thorough inspections of the hotel F&B operations to ensure excellence is consistently maintained.
  • Verifying that the best products are used in the F&B Operation on a regular basis.
  • Taking responsibility for the timely delivery of capital projects within the building to ensure company assets are effectively maintained.
  • Establishes positive contacts within the hotel and Wyndham’s internal organization to ensure best use of company’s skills, services and professional knowledge.
  • Identifies opportunities for resources and facilities to be shared between the properties and implement practice.

PEOPLE MANAGEMENT

  • Flag any Employee relations matters or address any people related questions with the Operations Manager
  • Responsible for leadership of direct reports and their teams (recruitment and selection, onboarding, performance management & development, engagement, counselling and employee relations.
  • Train and develop the team and provide support when required
  • Ensure to drive Continuous Performance Management of all direct reports. All team members should have business and personal development goals, where the PDP is kept live.
  • Actively participate in the WeCom activities  
  • Maintain and enhance the open-door policy to all team members providing advice and guidance when needed in regards to their issues or concerns and/or grievances
  • Ensure that the hotels are fully compliant with Wyndham people policies and procedures, and upkeep of the standards outlines in the HR Success Review

Other Responsibilities

  • Talent Reviews are alive and active and the target audience know why they are so important
  • Ensure to drive people performance to meet / exceed HR BSC targets in all operational departments
  • Conduct regular coaching sessions with the F&B team to further develop both their technical and management skills.
  • Manage the AES process to ensure that the follow up meetings are done and the staff members have timely feedback.
  • Review manning and re-recruitment of all positions
  • Inspiring a positive work environment, being a true Wyndham and Ramada Encore Ambassador
  • Be present at peak operational hours, working on a 5/7 shift basis including duty management and of working In and On The Business in order to drive quality, efficiency and give leadership to departmental managers, supervisors and team members.
  • Ensure vacation, PH and lieu days are used to the needs of the business
  • Any other reasonable duties as directed by the Operations Manager.

FINANCE

  • Responsible for delivery of budgeted targets – revenue and operating costs of the F&B department including stock taking and ordering and storage of wine list, keg beer/cider, spirits and mixers  
  • Prepare financial budget/forecast to reach the desired revenue and profitability for F&B department in conjunction with the Operations Manager. Leverage the existing tools (i.e. forecasting tool, P&L reports) to ensure forecast, budget and their accuracy are achieved along the quarters and year over year.
  • Assisting the HOD’s to prepare monthly forecasts
  • Staying up-to-date with financial results (budget vs actual) in sales and cost areas and ensure that sales and profit are maximised
  • Controlling expenses and recommend and implement measures to control them.
  • Attend and actively participate to the Revenue Strategy meetings on a regular basis. 
  • Maximize revenues for all areas of the operation, through innovative marketing and promotional activities, focused customer research, creative and innovative menu’s and promotions, and development of new products / services / features
  • Take an active role in the preparation of the Marketing Plan, Operation Plan and related Action Plans, and F&B pricing strategies

Background, skills, education

  • A recognized business or hospitality management qualification or a graduate degree
  • Minimum 2 years’ experience as an Assistant F&B Manager or outlet manager in a hotel or branded restaurant
  • Experience of managing people / effective leadership
  • Experience of driving service quality
  • A strong sense of commerciality and financial acumen
