Ramada by Wyndham Manama City Centre is now seeking a Chef De Partie- Pastry  to join our team in Bahrain.

Job Summary

 

The Chef de Partie-Pastry is responsible for  leading & managing all Pastry & Bakery activities within the hotel, ensuring compliance with set standards in quality, hygiene, productivity & guest satisfaction. Promote cross-sectional effective communication with positive team spirit. The Chef de Partie-Pastry is also responsible for controlling food and labour costs while maximizing guest satisfaction

Education & Experience

 

  • A culinary degree; or at least 2 years of progressive experience in a hotel or a related field.
  • At least Four years of pastry chef experience in an upscale, high volume hotel/resort or restaurant.
  • Good knowledge of pastry arts and ingredients
  • Prior management/supervisory experience.
  • Have a creative passion for pastry, service and the ability to innovate.

  • Long hours sometimes required.

General Requirements

 

  • Assist the in the  production  and  management of Pastry & Bakery products to meet growth in line with budget KPI targets
  • Ensure Pastry & Bakery items produced is of sufficient quality & quantity to deliver customer satisfaction.
  • Ensure KPI targets on food cost percentage are achieved & waste management is controlled throughout the product life cycle
  • Assist the culinary excellent & development team to maintain accurate recipe data to allow precise costing calculations & ensure approved recipes are followed within the Pastry & Bakery
  • Monitor quality of all food product and presentation.
  • Ensure preparation of required reports, including (but not limited to) wage progress, payroll, revenue, employee schedules, quarterly action plans.
  • Make cooks aware of daily forecasts and customer counts so that they can be adequately prepared to serve both hot and cold food on time.
  • Respond to guest complaints in a timely manner.
  • Ensure compliance with SOP’s in all outlets.
  • Ensure compliance with requisition procedures.
  • Attend all meetings as required.
  • Conduct staff performance reviews in accordance with Wyndham standards.
  • Understand, implement and monitor corporate promotions in outlets, including buffet and three-meal concept standards.
  • Know and enforce all local health department sanitation laws.
  • Work with the Director of F&B to create and implement menus.

Fundamental Requirements

  • Assess food portion size, visual appeal, taste and temperature of items served.
  • Check all stations at the end of every shift for proper food storage and sanitation.
  • Check food purchases for proper ordering, quality and price structure.
  • Oversee daily activities such as preparation for all food items, sanitation of the outlets, receiving daily inventories, log-on report and food cost report.
  • Prepare daily food production sheets.
  • Coordinate with relevant departments & kitchen section to ensure effective communication & support of logistical structure in delivery of end product
  • Participate in culinary workshops & presentation to existing & potential customers
  • To carry out any other reasonable & lawful request directed by the Management
